7 Easy to prepare Truffle Recipes

Truffles are well known for their strange appearance and other-worldly aroma. Gourmet chefs have referred to them as the ‘diamonds of the kitchen’ due to their versatility in higher-end cuisine. We encourage you to try out some of the recipe’s below to find out for yourself if these stinky pieces of edible gold have a special place in your heart, just like they do in ours.

Their mysterious nature and apparent scarcity have made truffles a delicacy for the most prestigious and wealthiest starting as far back as 20 BC. Luckily nowadays, select boutique retailers like La Tarantella Truffle have the ability to make these “diamonds” available to the public!

There is nothing quite like preparing a fantastic meal with fresh truffles, so we’ve put together a guide on how to prepare the most delicious truffle recipes! We love truffles and the important role they play in our traditional Italian kitchens. For us, sharing the steps to successfully make and enjoy these timeless dishes is our pleasure.

1) Fonduta Con Tartufi (Truffle Fondue)

A northern-Italy favorite, this recipe is said to come from an area near the Tanaro river in the province of Cuneo in Piedmont. This Fonduta Con Tartufi is a simple, yet delicious and traditional recipe. Keep the fondue warm and choose fresh black over white truffles if possible, and never use truffle oil. Also, this pairs nicely with a fresh baguette or your favorite hard roll. This recipe is designed for parties, but feel free to cut everything in half to feed a smaller party of four!

Serves 8

  • 2 lb Fontina Cheese: diced with a spot of milk
  • ½ cup butter
  • 10 egg yolks
  • 6oz fresh truffles, shaved

Step 1: In a large mixing bowl, add the diced Fontina cheese and cover with milk. Chill in fridge for 2-3 hours.

Step 2: Boil water in a large skillet. In another skillet, add butter, cheese, milk and egg yolks. Place skillet with ingredients over boiling water, keeping the water from mixing with ingredients. Vigorously mix until cheese starts to melt.

(Note: a double broiler or bain marie may be exactly what you need)

Step 3: Once your dish reaches a creamy consistency, remove from the boiling water. Keep the fondue warm as you spread the shredded truffle across the top. Now, all that it left is to dip your delicious and warm bread in and enjoy!

2) Potatoes and Brussels sprouts with Black Fresh Truffles

 

A dish so delicious, you will certainly want to make it every day.

Serves: 4

Time: 45 minutes

What you will need:

  • Baking tray
  • Truffle salt & Black pepper
  • 600g Potatoes
  • 100g Brussels sprouts
  • Olive oil and Truffle oil
  • 50g of Fresh Black Truffle: clean and brush surfaces

 

Step 1: Preheat oven to 220ᵒC

Step 2: Cut the Brussels sprouts in half

Step 3: Cut the potatoes in the way that you enjoy more

Step 4: Add some regular olive oil on the bottom of the Baking tray and place potatoes and sprouts in it

Step 5: Let theme baked for 30 minutes

Step 6: Add truffle olive oil truffle salt and Black pepper

Step 7: Let it broil for 5 minutes

Step 8: Shave Fresh Black Truffle on top and Serve

3) Chesnut and Black Truffle Stuffed Roast Chicken

Serves 5-6

What you will need:

  • 1 small chicken (1kg +)
  • 2 large eggs
  • Dashes of sage, rosemary, salt and fresh pepper
  • 500g truffles
  • 300g fresh spinach
  • 200ml extra virgin olive oil
  • 500g minced chicken meat
  • 200g black truffles

Step 1: Rub salt and pepper on cleaned chicken.

Step 2: Chop and boil chestnuts

Step 3: Blanch spinach

Step 4: Place minced chicken into mixing bowl adding eggs, half of the truffles (sliced), salt & pepper, spinach and chestnuts. Top off with grated parmesan.

Step 5: Stuff chicken with mix in lower cavity. Reseason and set aside temporarily.

Step 6: Blanch potatoes for roughly five minutes and pour into roasting tray. Mix with 2tbs of chopped rosemary & sage, salt & pepper, and 200ml of olive oil.

Step 7: Pour half of the mixture onto potatoes, placing the chicken on top of the potatoes, and then pouring the rest of the mix over the dish.

Step 8: Roast in oven for an hour until the internal temp reaches 70ᵒC

Step 9: Serve with a nice glass of red wine, with a piece of chicken topped with the rest of the fresh truffle

4) Risotto Truffle & Parmesan

Serves 4 person

Time: 30 minutes

What You Will Need:

  • 1tbs Butter
  • 1tbs Truffle olive oil
  • 80g Fresh Black Truffle
  • 1/4 cup parmesan cheese
  • Salt and pepper
  • 2 cloves minced garlic
  • 400g Truffle rice or regular Arborio Rice
  • 1/4 cup dry white wine
  • 5 cups of stock (chicken or vegetable)

Step 1: Boil stock and turn off heat

Stet 2: Heat skillet on medium, adding butter and Truffle olive oil once hot – bring to simmer

Step 3: Add garlic and dry rice. Stir together and cook until garlic is tender and rice begins to turn clear

Step 4: Add salt, pepper and white wine. Cook until dry.

Step 5: Pour 1 cup hot stock stirring frequently until broth is absorbed and rice is nearly dry.

Step 6: Repeat Step 5, allowing the liquid to absorb almost entirely before adding the next cup

Step 7: Once dense and oatmeal-like, roughly 20 minutes of cooking time, is reached, serve the rice.

Step 8: Garnish white shaved Fresh Black Truffle and enjoy!

5) White Truffle Tagliatelle

The easiest way to make pasta but the most tasty !

Serves:  4

Time: 15/20 minutes

What you will need:

Step 1: In a large saucepan boil plenty of salt water and bake the noodles “al dente” .

Step 2: In the meantime, clean the truffle with a toothbrush or rub it with a damp cloth to remove any residual earthworms and grate slightly to add to the butter later

Step 3: Melt the butter in a large frying pan and combine the grated truffle. As soon as the noodles are cooked al dente, drain, pour into the frying pan with the truffle butter.

Step 4: Stirring with a wooden spoon, let them flavor for a few minutes

Step 5: Transfer the seasoned noodles to a serving dish and serve them well warmly, sprinkled with the remaining truffle cut into slats with the truffle shaver.

6) Ribeye with Black Truffle Garlic Sauce

Serves 4

Overall Time: 30mins

What You Will Need: kitchen string/twine to keep in rub

Rub:

  • 2tsp coriander seeds
  • 2tsp ground espresso coffee beans
  • 1tsp garlic salt
  • 1tsp barbecue spice
  • 1tsp coarse sea salt
  • 1tsp treacle sugar
  • ½ tsp dried oregano
  • (2) 300g rib eye steaks, thick cut 4cm, bone-in
  • 2Tbs butter
  • 1Tbs olive oil
  • 1 sprig rosemary
  • multiple spigs of thyme

Sauce:

  • 1Tbs butter
  • 2Tbs cognac
  • 2 cloves crushed black garlic
  • 1C fresh cream
  • 1Tbs fresh black truffle, minced

Step 1: Using a mortar and pestle, grind all rub ingredients.

Step 2: Generously rub steaks with rub and let stand for 30 minutes minimum (overnight if possible).

(remove fat ring)

Step 3: In large saucepan, heat butter and oil to a bubble. Tie herbs together with kitchen string and brush the bubbling mixture.

Step 4: On high heat, render fat on each side of steak by standing upright in pan, allowing steaks to brown for a few minutes on each side, carmelizing nicely.

Step 5: Reduce heat to moderate and turn the steaks once or twice and cook until blood runs off. The steaks are now medium rare.

Step 6: Baste streaks with herbal brushes created earlier, remove from pan and allow to rest.

Step 7: Add butter, cognac and garlic to original pan with juices and allow to simmer until reduced to half.

Step 8: Add cream and simmer gently until cream thickens. It should be able to coat wooden spoon.

Step 9: Stir in truffles and mix well over heat for a few seconds

Step 10: Season to taste, however keep in mind that the rub will add plenty of flavor

Step 11: Serve steaks, pouring juices generously.

7) Porcini, Sausage and Black Truffle Pizza

Mixing the ultimate comfort dish with a gourmet ingredient like black truffles is outrageously delicious. This recipe makes four personal sized pizzas and will take less than an house.

What You Will Need:

  • 4 individual pizza dough balls
  • 4 cups chopped portobello mushrooms
  • 4 sausage links removed from casings
  • 2-3Tbs olive oil
  • 6 cups shredded mozzarella cheese
  • 1 cup fresh truffle pesto
  • 30g fresh black truffle
  • 1 cup grated pecorino chesse
  • Cracked black pepper

Step 1: Add 2Tbs olive oil to saucepan with mushrooms and cook until lightly browned. Then remove mushrooms from pan

Step 2: Cook sausage in frying pan through

Step 3: Remove sausage from pan, draining excess oil

Step 5: Individually roll out one dough ball into 12-14” circle, place on cornmeal dusted pizza pan

Step 6: Evenly spread ¼ of the mozzarella across the dough

Step 7: Top with ¼ of meat and mushrooms

Step 8: Spoon pesto evenly on top, then sprinkle ¼ of pecorino cheese

Step 9: Bake in oven for 12-15mins or until puffy and browned

Step 10: Repeat

Step 11: Spread fresh shaved black truffles over pizza and serve!
